Duck Salad (Vegetarians Look Away Now)

Remember I went through that phase of being obsessed with roasting duck? Well there was a lot of left over duck, so I embraced food thrift and shredded it and chucked it in a bowl with:

  1. blanched broccoli
  2. rocket
  3. olives
  4. prosciutto
  5. red onions
  6. flat leaf parsley

It was good you should try it.
