I've got a key lime pie in the oven. Because my love of retro food knows no bounds today. I usually use a biscuit crumb base but because I couldn't be bothered, I've used a pre packaged shortcrust pastry base instead. Just blind bake it 1st. I also didn't use cream- substituted it with cream cheese. Smells wonderful so far. Recipe Here.

FF, what biscuits do you usually use as a base? I've used Marie biscuits for a couple of things recently but the base has been hard as a rock....

ReplyDeleteI have a banana cake in mine in anticipation of the afternoon tea onslaught. Your Key Lime Pie looks delicious....do you think you could substitute actual limes for lemon juice and shredded kaffir lime leaves, as have lots of these two ingredients in my garden while limes in Hobart retail for about $20 each! Rx
ReplyDeleteRomy limes are $1.50 here so I used a bit of additional fake reconstituted lime juice in a bottle. I'm not too proud so yes use lemons and use kaffir lime leaves.

I find it devastating that we have no actual key limes in this country... Or none that I know of. Not enough persimmons either for that matter. Kathleen
ReplyDeleteI tried the Key Lime pie ages ago, I don't know where I went wrong but it wasn't one of my all time best efforts. Must give it a crack again.
ReplyDeleteLooks super yummy - Limes are a crazy price at the moment. I've considered dabbing a little behind my ears for that citrus note!
